Book: Show us a great non-fiction book.
Way before Alton Brown came around, Harold McGee brought the science of producing food and cooking to a level that can enrapture the average joe. Like, how egg whites and heavy cream can both whip up into a foam, but for completely different reasons. I loaned it to a friend and he stopped talking to me, so I never got it back.

What's one family recipe that you wish you knew how to cook?
Anything my paternal grandmother made, really. We moved from Taiwan to New Jersey when I was 12, even though she visited often, that was her vacation and she didn't cook much. The only thing she taught me to make was fried tofu. It really sucks because I really wish I had a chance to learn to cook from her, she was the best.
